Happy Valentine's Day, Eat Some Cookies



Happy Valentine's Day!  We've just been through a really crazy busy weekend so it really FEELS like a holiday today.  


My beloved Grandma Mickelson died right around my 4th birthday, but I remember her.  She was really the only Grandma I ever had so her memory is precious.  One of the few memories I have of her is that she made incredible sugar cookies.  I have a faint memory of being at her little house in Lisbon and her handing me a cookie.  The stronger memory is that it was really delicious.


As I've stated before I was never the mom who baked a lot of cookies when my kids were little. And truthfully, I didn't need to be because my awesome next door neighbor Elaine kept us well supplied with delicious baked goods for 10 years.


 But now I'm rediscovering the joy of making treats for my family. (And besides, Elaine and I haven't been neighbors for YEARS).  Last year I was looking for a good sugar cookie recipe.  It needed to remind me of my sweet Grandma's cookies.  My friend Lisa gave this recipe to me and it has our whole family in love with them.


So I'm sharing the recipe with my "readers".  You can roll them thick or thin.  I like them thick and soft and chewy!  And I make cream cheese frosting that is really heavy on the cream cheese.  Now if that has your gastric juices flowing in a good way, read on to get the recipe.


Lisa Kuenzi's Sugar Cookies

1/2 cup butter flavored Crisco                           1/2 tsp salt
1 cup sugar                                                            1/2 tsp soda
1 egg                                                                       1/2 cup sour cream
3/4 tsp. fresh lemon juice
2 1/2 cups flour


Mix together and then chill dough.  Roll out and cut into cookies.  Bake at 400 for 6-8 minutes.

That's it!  I never make a single batch.  More often I triple it but when I am short for time for rolling I just make a double batch.
